Purslane Cucmber Salad

- Ingredients:
- 1 cup cucumber, halved lengthwise and sliced.
- ⅔ cup halved cherry tomatoes
- ½ cup purslane leaves
- 2 teaspoons toasted sesame seeds
- 2-3 Tablespoons rice vinegar (start with 2 tablespoons, and add more if needed)
- 1-2 teaspoons sugar
- Mix all ingredients together in a bowl, cover, and chill in the refrigerator until ready to serve.
