Low Fat Oven-baked French Fries

Optional: Add more flavor to your fries with one of the following 1-2 crushed garlic cloves or ½ teaspoon granulated garlic 1 tablespoon Italian seasoning 1 teaspoon powdered cumin (it coats the potatoes better than the seeds) 1 teaspoon curry powder
Ingredients
  • 4 medium-size baking potatoes (about 4 inches in length)
  • 1-2 tablespoons olive oil
  • 2 tablespoons water
  • salt to taste
  • non-stick cooking spray
Instructions
  1. Preheat oven to 450 degrees. Coat a shallow baking sheet with cooking spray.
  2. Scrub outside of potatoes and cut out any bad spots. Peeling the potatoes is optional.
  3. Slice potatoes into fries. The size is up to you. Thinner cuts will yield crispier fries, but watch them closely in the oven; they brown quickly.
  4. Place sliced potatoes into a microwave safe container with a lid. Add 2 tablespoons water and toss potatoes to moisten them. Cook 4-5 minutes in microwave on High. Microwave just until the potatoes heat up and barely soften. They shouldn't be completely cooked, as this steams them and they'll be mushy when baked.
  5. Remove potatoes from microwave and toss with olive oil and salt. If you're adding any of the optional ingredients, mix it in as well.
  6. Place in a single layer on baking sheet.
  7. Bake for 10 minutes, then stir. Lightly coat the potatoes with cooking spray, return to the oven, and bake until lightly browned. Serve hot.
