Tuna Burgers with Ginger, Garlic and Soy Sauce

Ingredients You Need

• 1 Pound Tuna Steak
• 3 Cloves of Garlic
• 2 Inch Piece of Fresh Ginger
• 3 to 4 Tablespoons of Tamari Soy Sauce
• 2 Scallions
• ¼ Bell Pepper
• ½ Pound Shitake Mushrooms
• Coarse Salt
• 4 Large Gourmet Burger Buns
• ½ Cup Wasabi Mustard
• ½ Cup Mango Chutney
• 2 Tablespoons Vegetable Oil

• Large Skillet
• Medium Skillet
• Food Processor
• Large Mixing Bowl
• Cutting Board
• Sharp Paring Knife
• Vegetable Peeler
• Food Grater

Making the Tuna Burgers

• Wash your tuna steaks and cut them into chunks. Place the chunks of tuna in your food processor and turn on until the tuna is the consistency of ground hamburger. Scrape the tuna into your large mixing bowl. Set aside.
• Chop your garlic into fine pieces and add it to the mixing bowl. Then peel your ginger and grate it with your food grater into the mixing bowl with the tuna.
• Take your scallions and bell pepper and chop them into little pieces and add them to the tuna as well along with the soy sauce. Mix it all together thoroughly and using your hands for four burgers out of the mixture. Set on a plate ready to cook.
• Put your shitake mushrooms on the cutting board, slice them and set them in a separate bowl.
• Put your large and medium skillets on the stove. Turn the large skillet on high and the medium skillet on medium high and add 1 tablespoon of vegetable oil to each one.
• Once the pans are hot add the shitake mushroom slices to the medium skillet and the four tuna burgers to the large skillet.
• Cook the tuna burgers for 2 minutes each side (4 minutes total) for rare and 4 minutes each side (8 minutes total) for well done. Sauté the mushrooms for 5 minutes or until tender and salt to taste.
• To assemble burgers cut your buns in half and put a tuna patty on each bottom bun. Spread wasabi mustard on and top with the sliced mushrooms. Slather the top bun with mango chutney and place it on top of the burger.
