Chicken A La King

One of my favorite meals my Grandmother would make when I was young was chicken a la king. This delicious hot dish was the perfect thing to eat after playing out in the snow. With lots of freshly cooked vegetables and plenty of chicken this is a healthy meal to serve over brown rice. Read on to learn how to make this delicious past time and bring a new recipe into your family cookbook.

Ingredients You Need

2 Chicken Breasts
1 Large Carrot
½ Cup of Sugar Snap Peas
½ Sweet Red Bell Pepper
1 Cup of Fresh Button Mushrooms
1 Chive
2 to 2 ½ Cups of Chicken Broth
5 Tablespoons of Butter
¼ Cup of All Purpose Flour
Olive Oil
Sea Salt
Pepper Grinder
4 Servings of Cooked Brown Rice or Orzo

Making the Chicken A La King

Begin by starting your rice or orzo. Cook according to the directions on the package. Then bake your chicken breasts in a small baking dish at 350 degrees Fahrenheit for about 30 minutes or until fully cooked. Put a little olive oil, salt and pepper on the breasts before you put them in the oven.

While the chicken is cooking start a small pan on the stove with a steamer insert and water in the bottom. Peel and slice your carrot and then put it in the pan to steam until soft. Remove from the heat and put the carrots into a small bowl.

Using the same pan you can steam your red peppers and sugar snap peas. Cut your sweet red bell pepper in half, remove the seeds and chop it into small diced pieces. Then wash your sugar snap peas and remove any stems.

Place the diced sweet bell peppers and sugar snap peas in the steamer. Once the water is boiling, steam the peppers and peas for about 2 to 3 minutes. Remove from the heat and set aside.

Then take your button mushrooms and remove the end of the stems and slice them. Put them in the small frying pan with 1 tablespoon of butter and cook on medium until they are soft. Set aside.

Next take the 4 tablespoons of butter and put them in your large sauce pan. Turn the burner on medium. Add the all purpose flour and whisk to get out any lumps. Then add the chicken broth and mix it together well.

While the mixture is heating cut your chicken breasts up into small chunks and set them aside so they are ready to go. Keep mixing the broth, flour and butter mixture until it begins to thicken. While this is happening slice your chive up into thin pieces and add it to the mixture.

Then add your chicken, carrot, pepper, sugar snap peas and mushrooms to the pan and stir well. Bring the mixture to a simmer and add a little more chicken broth if it is too thick. Add salt and pepper to taste and then simmer for another five minutes.

Serve the chicken a la king immediately over a serving of orzo or rice and enjoy.
