Making the Mayonnaise

Start by putting your egg yolk in the large mixing bowl and add start up your electric beaters. Slowly pour in the olive oil as you have the electric beaters going on high.

Once all of the oil has been placed in the bowl beat for an additional few minutes until it is completely smooth. Then slowly add the mustard and vinegar and beat again.

Once that is fully mixed in add the salt and pepper to taste. If the mayonnaise is too thick you can always add a tad bit more olive oil. When it is to your liking scrape the mayonnaise into the jar and place the lid on tight. Store it in the refrigerator for use.

This recipe should make about a half cup of mayonnaise so you can double, triple or quadruple the recipe as needed. Make sure you keep it refrigerated so that the mayonnaise does not spoil.
